Wireless Using VIA off the network

I'm looking to set up three presentation rooms of three different sizes with various capabilities that may include video conferencing, video presentations from various devices and collaborations (exact requirements per room will be provided later).

I'm looking to possibly use VIA products, but I'm wondering whether these can be used without having them connected to the existing network. The reason being that the IT people managing the network do not want to have any AV getting on the existing network. In other words, I'd like the VIA to use an ad-hoc network for the sole purpose of the presentation/collaboration taking place in the particular room.

If it's possible to use VIA products without connecting them to the existing network, I will provide requirements for each room and seek your advice as to required hardware.

VIA products do need to be on a network, but it doesn't have to be the existing network serving IT.

You can set up an ad-hoc network using a simple wireless router - it doesn't even have to be connected to the Internet.
